Tools I use and if you continue you may want to buy these,
They are worth it …
danish whisk
proofing basket
clay baker
15.50 ounces of flour
1 1/2 teaspoon of salt
1/4 teaspoon of yeast
1 1/2 cups of water
mix the ingredients well … it will look rough … using the whisk until all the flour is incorporated
cover bowl with a plastic bag and leave in draft free area over night ...
remove dough and shape it into triple fold and let rest 15 minutes
fold into proofing basket and cover with towel and let it sit
for 1 1/2 hours (i spray my proofing basket with oil and then add a variety of seeds and rosemary
in the meantime turn oven on to 450 deg and heat
clay cooker for 50 minutes …
at the end of heating the clay cooker add dough and cover
bake 30 minutes … take top off and bake 15 minutes more
while the bread is hot and resting I rub it down with a stick of
butter
the fun is no 2 loaves ever look the same
